Lime cupcakes with Mango Buttercream frosting!
What you need:
- 1 box of yellow cake mix
- 3 limes (1 1/2 of these will go into the frosting)
- 1/2 c. sweetened lime juice
- 1/2 c. vegetable oil
- lime jello
- 3 eggs
- 1/2 c. water
For icing:
- 1 mango
- 4 - 5 c. powdered sugar
- 8 Tbs. Crisco or all vegetable shortening
- 8 Tbs. butter, softened
- 1 t sweetened lime juice
Instructions for cake:
- Preheat oven to 325° for non stick (350° for regular or dark pans)
- In a large bowl, combine cake mix & lime jello mix (do not actually make the jello, you just want to put the powder into the mix)
- Add to that the juice of half a lime, the sweetened lime juice, water, and oil. (TIP TIME: To ensure moist cupcakes, always add a little more oil than what the recipe calls for. You will always have the best cupcakes in town!)
- When combines together your cupcake mix should be a lime green color.
- Make sure that the cupcake pan is lined with your choice of liner. You can get crazy with the colors or just get plain white liners. It's up to you! We got our liners at our local craft store for under $2!
- Pour mix until the liners are about 3/4 full.
- Put into oven for about 20 minutes.
Instructions for icing:
- Cut up 1 mango into small cubes.
- In a blender, combine the mango and the other half of lime you have into a puree. It's okay if you have some little chunks of mango, it makes the icing really tasty! (Note: it should come out to be 1/4 c. of puree. If you have a little more than that, it's okay!)
- Put softened butter and shortening into large mixing bowl. Cream them together until it is almost white and very fluffy! (This is the key to making great buttercream icing!)
- Mix in Mango puree. Beat until incorporated fully.
- Slowly mix in powdered sugar. Whenever you stop to put more in, make sure that the sides are scraped down! You want to have everything mixed nicely together.
- Add to icing the juice of one lime and a teaspoon of sweetened lime juice.
- When this is all done, the icing should be nice and fluffy!
You can ice your cupcakes however you like! Lacey put the icing into a piping bag and put the icing on that way. We thought about this step afterwards, but if you would like extra decoration, you can take the last lime you have and slice it very thin, spilt it halfway down the middle, and twist!
